Emmer with Tomato-Basil Sauce
Serves 4 (side dish)

1/2 cup whole grains
2 cups water
1/2 cup basil leaves
1-2 leeks
1 cup chopped tomatoes
1/4 cup heavy cream
Tender Baby Kale Salad
Serves 4

1 bunch young tender kale
1/4 cup vinaigrette
1/4 cup dried cranberries
1/4 cup sunflower seeds
1/4 cup chevre (goat cheese)
